Dry Manchurian

Dry Vegetable Manchurian is an Indo-Chinese dish that is relished by one and all. It is served as a starter. It is a nutritious dish as it has a combination of veggies. These veggies are mixed with some flour and deep fired into vegetable balls. Then these vegetable balls are combined with ginger, garlic and some sauces to make it a hot, spicy and flavorful dish.


Veg Manchurian Balls:

  • 1 Cup Grated Cabbage
  • 1 Grated Carrot
  • ½ Cup Chopped Spring Onions
  • ¼ Grated Cauliflower
  • ½ Cup Maida/All Purpose Flour
  • 3 Tbsp. Corn Flour
  • 1 Tsp Red Chili Flakes
  • ½ Tsp Black Pepper Powder
  • Oil for deep frying
  • Salt as per requirement

Veg Manchurian Sauce:

  • ½ Cup Finely Chopped Spring Onion
  • 1 Tbsp. Finely Chopped Ginger
  • 1 Tbsp. Finely Chopped Garlic
  • 2 Finely Chopped Green Chili
  • 2 Tbsp. Soy Sauce
  • 1 Tbsp. Red Chili Sauce
  • 1 Tbsp. Tomato Sauce
  • 1 Tsp Vinegar
  • 1 Tsp Corn Flour
  • 1 Tsp Red Chili Flakes
  • ½ Tsp Black Pepper Powder
  • 2 Tbsp. Oil
  • Salt as per taste


Heat a pan with some oil in it. Add finely chopped spring onion and saute. To it add cabbage, carrot, cauliflower, and saute it for few minutes. Take out these veggies in a bowl and let it cool down. Add all-purpose flour, chili flakes, black pepper and salt. Mix well. (You can also mix all the raw vegetables to flour and make small balls) Turn this mixture into small balls. Now roll these balls into corn flour and deep fry till it turns to golden brown in color. Drain the veg balls on kitchen towel and keep it aside.

Now, heat oil in a pan and add ginger, garlic and chilies and mix it. Add spring onion to it and saute till a minute. Add tomato sauce, red chili sauce and soy sauce in it. Mix corn flour with 3 tablespoons of water and add this mixture to the pan and keep stirring. Then quickly add vinegar, chili flakes, pepper and salt and mix it well. The sauce will start to thicken. Now add fried veg balls in this mixture and toss well. Switch off the gas. Add some chopped spring onion and give a stir. Garnish it with remaining chopped green onion. Dry Vegetable Manchurian is ready to serve hot.
